i've got meatloaf on the brain.

The past week and a half I have planned on making meatloaf (...meat_loaf?) for dinner. I even have the package of ground beef defrosted and waiting in my refrigerator to be man handled in a mixture of breadcrumbs and onions.
Who doesn't like this hearty comfort food?
Here are a few surprising tips I learned about making the perfect meatloaf:
- use fresh white bread instead of bread crumbs, and mix it with half and half!
- small bits of bacon melt into the meat, adding flavor and a bit of crunch
- grated carrot makes it moist and a bit sweet
- molding it into a brick with a rim around the top holds all the delicious ketchup flavor in the right place
